Gusto's Salads & Sides Dishes
Sweet Potato Casserole
Serves 8
3 med sweet potatoes
6 slices Gusto thick apple wood smoked bacon, diced
1 cup dark brown sugar
1/3 cup flour
3 tablespoons melted butter
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
2 eggs, lightly beaten
1/2 cup butter
1. Heat oven to 400°F
2. Roast sweet potatoes until soft approximately 1 hour
3. While sweet potatoes are roasting, cook bacon crispy, let cool
4. When bacon has cooled crumble into a bowl, add brown sugar, flour, melted butter mix to combine and set aside
5. When sweet potatoes are done, turn oven down to 350°F
6. Carefully remove skins from sweet potatoes and mash in a med bowl to release steam and allow them to cool
7. Add salt, vanilla, eggs and butter to sweet potatoes beat for about 1 min on high with an electric mixer
8. Spread sweet potato mixture in to a shallow baking dish (9 in cake pan works)
9. Sprinkle topping onto the sweet potatoes
10.Place into the oven a bake for 30 minutes
11.Let casserole rest for 30 minutes before serving
