Gusto's Sandwiches

Gusto Pizza Torpedos

Serves 6

2 pounds Gusto Italian sausage
1 large onion, diced
1/2 cup roasted red pepper, diced
2 cloves garlic minced
1 tsp dried basil
1 tsp dried parsley
1 tsp dried oregano
1/2 cup tomato paste
1-15 ounce can plain diced tomatoes, not drained
Fresh ground pepper
1 French baguette, cut lengthwise and in 3 sections for a total of 6 pieces
1 1/2 cups of shredded mozzarella cheese
2 tablespoons fresh basil, leaves rolled up and cut into thin ribbons (chiffonade)

1. Heat oven to 350 F
2. Brown Gusto Italian sausage over medium heat
3. Drain all but about 2 tablespoons of fat
4. Add onions and peppers cook for a few minutes
5. Add garlic, dried herbs and tomato paste combine thoroughly
6. Add canned tomatoes
7. Simmer on low until liquid is reduced
8. Add fresh ground pepper to taste
9. Place the Gusto Italian sausage mixture into a bowl and stir to allow it to cool slightly
10. While the Gusto Italian sausage mixture is cooling
11. Scoop out the center of the bread to make like a "boat" for the filling
12. Add mozzarella cheese to the cooled sausage mixture and place in the bread
13. Bake for 10 minutes to heat through and melt cheese
14. Top with basil
